RED VELVET CAKE
Ingredients
For the cake:
- – 270g all-purpose flour
- – ½ tsp Baking Soda
- – 1 tsp Baking Powder
- – 25g Cocoa Powder
- – 250ml whole milk
- – 1 tbsp lemon juice or white vinegar
- – ¾ cup vegetable oil
- – 300g sugar
- – 2 eggs
- – ¼ tsp Salt
- – 2 tsp Vanilla Essence
- – 2 tbsp Red Food Coloring
For the frosting:
- – 400g cream cheese room temperature
- – 180g unsalted butter room temperature
- – 160g powdered sugar
Instructions
For the cake:
- Preheat the oven to 180°C.
- Grease and flour two 15cm diameter cake pans.
- Sift together flour, Baking Soda, Baking Powder, and Cocoa Powder; set aside.
- Combine whole milk and lemon juice or vinegar; let it sit for 10 minutes.
- In another bowl, mix vegetable oil and sugar. Beat in eggs, Salt, Vanilla Essence, and Red Food Coloring.
- Beat until smooth, then add the sifted dry ingredients.
- Pour in the milk and lemon mixture, and mix.
- Divide the batter into 2 pans and bake for 40-45 minutes or until done.
- Cool for 15 minutes before removing from pans.
For the frosting:
- Beat cream cheese in a bowl.
- Add butter, powdered sugar, and continue beating until well combined.
To assemble the cake:
- Cut each cake into 2 equal layers.
- Spread frosting on each layer.
- Cover the entire cake with frosting.
- Decorate with cake crumbs.
