Homemade Cinnamon Roll Pancakes

🔹Ingredients:

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 1 large egg
  • 1 cup buttermilk
  • 2 teaspoons vanilla extract

Cinnamon Swirl Filling

  • 5 1/2 tablespoons packed brown sugar
  • 1/4 cup unsalted butter, melted
  • 1 1/2 teaspoons ground cinnamon

Cream Cheese Icing

  • 1/4 cup unsalted butter, softened
  • 2 ounces cream cheese, softened
  • 3/4 cup confectioners’ sugar
  • 1/2 teaspoon vanilla extract

🔸Instructions:

  1. In a bowl, mix flour, sugar, baking powder, and salt. In another bowl, whisk egg, buttermilk, and vanilla extract.
  2. Slowly combine the wet ingredients with the dry ingredients until just moistened and evenly mixed. It’s okay if there are lumps.
  3. In a small bowl, combine brown sugar, melted butter, and cinnamon. Refrigerate this mixture until it thickens to the consistency of toothpaste, about 10 minutes.
  4. In a microwave-safe bowl, mix softened butter and cream cheese. Heat in the microwave for 40 seconds, stirring until smooth. Add confectioners’ sugar and vanilla extract, stirring until the icing is smooth.
  5. Heat a griddle or skillet over medium heat and spray with cooking spray. Pour about 2/3 cup of batter onto the griddle. Cook until bubbles form, then cut a corner off the filling bag and swirl it over the pancake.
  6. Flip the pancake and cook until lightly browned. Drizzle with icing. Repeat with the remaining batter, wiping the pan clean between each pancake.

Note: Be sure to wipe the pan clean after cooking each pancake.
