  • 2 1/4 tsp dry yeast (7 g)
  • 4 1/4 cups flour (520 g)
  • 1 tsp salt
  • 1/4 cup softened butter (50 g)
  • 3 tbsp butter (45 g)
  • 3 tbsp condensed milk (45 g)

Instructions:

  1. Whisk sugar and condensed milk into warm milk. Add yeast and egg, whisk again.
  2. Combine wet and dry ingredients, including flour and salt.
  3. Use dough hooks to bring the dough together. Add softened butter and knead for ten minutes.
  4. Allow the dough to rest for one hour.
  5. Roll 2/3 of the dough into a 25×40 cm rectangle, then roll it into a log and cut into pieces. Place in a preheated baking dish.
  6. Repeat with the remaining 1/3 of the dough for smaller buns. Let the rolls rest for an hour.
  7. Before baking, brush the top of each bun with egg wash.
  8. Bake at 180C/350F for 25-30 minutes (20 minutes for smaller buns).
  9. Whisk equal parts butter and condensed milk; apply to warm buns.
  10. Once cooled, remove from baking pans.
