Crust:

  • 1 1/2 cups graham cracker crumbs
  • 5 tablespoons sugar
  • 1/3 cup melted butter

Filling:

  • 3 (8oz) packages cream cheese, softened
  • 1 1/2 cups sugar
  • 4 eggs, separated
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla

INSTRUCTIONS:

  1. Preheat your oven to 325°F.
  2. For the crust, blend graham cracker crumbs, sugar, and melted butter. Press the mixture onto the sides and bottom of a 9-inch springform pan.
  3. In the bowl of an electric mixer, combine cream cheese, sugar, 4 egg yolks, lemon juice, and vanilla.
  4. In a separate bowl, whip 4 egg whites until stiff and creamy. Gently fold the egg whites into the cream cheese mixture.
  5. Pour the combined mixture into the crust-lined springform pan.
  6. Bake for 35 minutes. Turn off the oven and let the cheesecake remain inside for an additional hour with the oven door closed.
