Ingredients
  

  • – 2 cups cooked and mashed sweet potatoes (about 3)

    – 1 1/2 cups sugar

    – 2 tablespoons flour

    – 1 can (5 oz) evaporated milk, divided

    – 1 egg, slightly beaten

    – 1 teaspoon vanilla

    – 1 unbaked 9″ pie crust

    – Glaze

    – 1/2 cup sugar

    – 2 1/4 teaspoons flour

    – 2 tablespoons melted butter

    – 2 tablespoons evaporated milk (from the above can)

    – 1/4 cup optional pecan halves

Instructions
 

  • Preheat oven to 375 degrees. Place the unbaked pie crust on a cookie sheet.
  • In a bowl, mix sugar, flour, most of the evaporated milk (reserving 2 tablespoons for the glaze), egg, and vanilla.
  • Stir in the mashed sweet potatoes and pour the mixture into the pie shell.
  • For the glaze, combine sugar, flour, melted butter, and the reserved 2 tablespoons of evaporated milk. Drizzle over the sweet potato mixture, avoiding excess.
  • Optionally garnish with pecan halves. Bake for 1 hour or until the crust is golden brown and a knife inserted near the center comes out clean.

Notes

You may skip the glaze for a less sweet option, especially if using leftovers from Sweet Potato Wedges.
