Ingredients
  

  • - 1 cup sugar
  • - 1/2 cup butter softened
  • - 2 eggs
  • - Zest of 2 lemons
  • - 1/4 cup fresh lemon juice
  • - 1 1/2 cups all-purpose flour
  • - 1/4 teaspoon salt
  • - 1/4 teaspoon baking soda
  • - 1/2 teaspoon baking powder
  • - 1/2 cup whole milk or plain yogurt

Glaze Ingredients:

  • - 1 cup powdered sugar
  • - 2-3 tablespoons fresh lemon juice
  • - Optional: Lemon zest for decoration

Instructions
 

  • Preheat oven to 180°C (350°F). Grease and flour a cake pan or line with parchment paper.
  • Cream butter and sugar until fluffy. Beat in eggs one at a time, then mix in lemon zest and juice.
  • In a separate bowl, sift together flour, salt, baking soda, and baking powder.
  • Gradually add dry ingredients to wet mixture, alternating with milk/yogurt. Mix until just combined.
  • Pour batter into prepared pan. Bake for 35-45 minutes or until a toothpick inserted into the center comes out clean. Cool in pan for a few minutes, then transfer to a wire rack.
  • While cake cools, prepare glaze by mixing powdered sugar and lemon juice until smooth and pourable.
  • Once cake is completely cool, pour glaze over the top. Sprinkle with lemon zest if desired.
  • Allow glaze to set before slicing and serving. Enjoy this refreshing and delightful lemon cake!
