Ingredients:
- 1.5 kg tomatoes
- 1 kg eggplants
- 1 kg zucchinis
- 1 kg bell peppers
- 1 kg carrots
- 200 g garlic
- 70 ml 9% vinegar
- 500 ml vegetable oil
- 200 g sugar
- 70 g salt
- Fresh herbs
Instructions:
- Grind tomatoes in a meat grinder or blend them, grate carrots coarsely, and dice eggplants, peppers, and zucchinis.
- To the tomato puree, add vegetable oil, vinegar, sugar, salt, and finely chopped garlic with parsley.
- Pour the tomato puree into the multicooker bowl and set the “Stew” program or simmer in a pot.
- Bring the tomato puree to a boil, add the diced vegetables, mix, and simmer for 45 minutes.
- Distribute the hot salad into sterilized jars, seal, flip, and insulate.
- These salads make an excellent alternative to standard canning: pickles or pickled cucumbers or tomatoes.
