Churro Snack Mix Recipe

My snack mix collection has grown a lot this year, and I couldn’t be happier! These mixes are simple to make and perfectly crunchy—ideal for munching on whenever a craving strikes. While I love a good savory snack, I’ve been especially drawn to dessert-inspired options lately. Take these Churro Snacks, for example! From the first bite, I knew it was a keeper, and I bet you’ll feel the same way.

For this recipe, I used Honeycomb cereal. Its mild sweetness and open structure make it perfect for holding onto all that churro-flavored coating. A quick stovetop sauce made with brown sugar, butter, and corn syrup serves as the sweet base. Once it’s heated and bubbly, a touch of baking soda and vanilla go in, causing the sauce to foam up and get extra airy.

The magic happens when you pour this mixture over the cereal, stirring to coat every piece. Next, a blend of cinnamon and sugar goes on top, giving each bite that classic churro flavor. Spread everything on a baking sheet, pop it in the oven for about 8 minutes, and let it crisp up. After cooling, break it into clusters, and you’re ready to dig in!

Ingredients

• 5 cups Honeycomb cereal
• 2/3 cup brown sugar
• 1/2 cup butter (1 stick)
• 1/3 cup corn syrup
• 1 teaspoon vanilla extract
• 1/4 teaspoon baking soda
• 1/2 cup granulated sugar
• 1 1/2 teaspoons cinnamon

Instructions

1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
2. Pour the cereal into a large bowl and set aside.
3. In a medium saucepan, combine brown sugar, butter, and corn syrup. Bring the mixture to a boil, stirring constantly, then continue to cook for an additional minute.
4. Remove the pan from heat and stir in the vanilla and baking soda. Be prepared for some bubbling as it foams up.
5. Pour the caramel mixture over the cereal, stirring to coat everything evenly.
6. In a small bowl, mix the granulated sugar and cinnamon. Sprinkle this mixture over the cereal, tossing until everything is coated.
7. Spread the coated cereal onto your prepared baking sheet and bake for 8 minutes, stirring halfway through for even crisping.
8. Let the snack mix cool completely before breaking it into clusters. Store any leftovers in an airtight container.

Enjoy your crunchy, churro-inspired snack!
