INGREDIENTS:
- 4 large sweet potatoes
- 4-6 slices of butter
- 1/2 cup of brown sugar
- 4 teaspoons of cinnamon
- 2 cups of mini marshmallows
- 1/3 cup of pecans (optional)
INSTRUCTIONS:
- Preheat oven to 400 degrees Fahrenheit.
- In a bowl, mix together brown sugar, cinnamon, and pecans (if using), then set aside.
- Wash the sweet potatoes and prick the skins with a fork.
- Place the sweet potatoes on a baking sheet and bake for about one hour, or until tender, depending on their size.
- Once done, remove the sweet potatoes from the oven and slice them open down the center.
- Add a slice of butter and a tablespoon of the brown sugar mixture into each potato.
- Top each sweet potato with mini marshmallows.
- Turn on the broiler and place the sweet potatoes back in the oven.
- Broil until the marshmallows are golden brown on top, being careful not to walk away from the oven.
- Serve immediately and enjoy the deliciousness!
