Homemade Taco Bell Mexican Pizza

I’ve been whipping up these Taco Bell-inspired Mexican Pizzas for years, and they’re always a hit. Not only do they taste so much better than the fast food version, but you can also customize the ingredients and add extra flavors to elevate the dish. When I heard Taco Bell was discontinuing the Mexican Pizza, I was shocked. It was such a beloved menu item! Thankfully, we can still enjoy it at home.

Is Taco Bell Really Discontinuing the Mexican Pizza?

Yes, you read that right. As much as it seemed like Taco Bell’s Mexican Pizza was an irreplaceable fan favorite (almost like the restaurant’s unofficial mascot), Taco Bell decided to remove it from their menu. It’s hard to believe, but we can still make this crave-worthy dish in our own kitchens!

Ingredients for Homemade Mexican Pizzas


• Ground Beef
• Taco Seasoning
• Flour Tortillas
• Oil (for frying)
• Refried Beans
• Mild Salsa (choose a chunky kind, not the liquidy variety)
• Red Enchilada Sauce
• Shredded Cheddar/Jack Cheese
• Sliced Olives
• Roma Tomatoes (diced)
• Shredded Lettuce
• Green Onions (sliced)
• Sour Cream

Instructions to Make Taco Bell Mexican Pizzas


1. Prepare the taco meat: Brown the ground beef in a pan and stir in the taco seasoning according to the package instructions. Use a potato masher to crumble the beef into small pieces—this gives it that signature Taco Bell texture. Set the beef aside.
2. Fry the tortillas: Heat a little oil in a frying pan over medium-high heat. Fry each tortilla until lightly browned and crispy. You only need enough oil to lightly coat the bottom of the pan.
3. Preheat the oven: Set your oven to 375°F (190°C).
4. Assemble the pizzas: On a greased baking sheet, place one tortilla. Spread a layer of refried beans over the top, followed by the taco meat and a drizzle of salsa. Top with a second tortilla, then coat it with enchilada sauce. Add shredded cheese, olives, diced tomatoes, and a little more cheese. Repeat this process until you’ve made four Mexican Pizzas.
5. Bake the pizzas: Place the baking sheet in the oven and bake for 5-7 minutes, or until the cheese is melted and bubbly.
6. Add toppings: Once the pizzas are out of the oven, garnish with shredded lettuce, sliced green onions, and a dollop of sour cream.

  • Preheat the oven to 375°F.
  • Place one tortilla on a greased, rimmed baking sheet. Spread refried beans on top, then add a layer of taco meat and salsa. Place a second tortilla on top, then coat it with enchilada sauce. Top with shredded cheese, olives, tomatoes, and more cheese. Repeat the process for a total of four Mexican pizzas.
  • Bake for 5-7 minutes, until the cheese is melted and bubbly. Slice and serve with shredded lettuce, green onions, and a dollop of sour cream. Enjoy!
